Creating Caramel - GBBO Inspired

Today (2 Nov 21)  is Caramel week on the Great British Bake Off! Yay! So I decided to join in and try my hand at making caramel.

 I made some Peanut Brittle from my Ghanaian cook book. (Zoe's Ghana Kitchen). I have never made caramel before. It looks ok but I had to make two batches of caramel to cover all the nuts. I amnquite sure this is just an excuse for eating sugar but I am looking forward to tasting it because I like nuts in everything. I am waiting for it to cool and I will munch along while watching Bake Off, hopefully with a nice cup of tea. Just right for watching the telly on a dark and chilly November evening.
