Miso Mistake?


Jamie Oliver has a cook book club on Facebook. It is great fun. Every month he recommends a book and club members buy the book and post pictures of their cooking. He arranges on line sessions with the authors and they also leave comments and helpful suggestions in the group.

Jamie also posts some free recipes from the book on his own website so that we can 'try before we buy' the book. This is also a good way of involving people who might not be able to afford the book.

Last month the book was 'East' by 
Meera Sodha. These are described as Asian inspired vegetarian and vegan recipes. 

 I was still trying out recipes from an earlier book but I decided to try out the 'Salted Miso Brownies' which is a free recipe and is on Jamie's website here

It says on the website that the recipie is not so tricky. 

Okay oh!

The recipie uses Miso which is a Japanese bean paste. Crystelle from Bake Off 2021 used miso in a few of her recipes so I decided to give it a go.

The mixture looked ok 

But emerged from the oven bubbling and certainly not looking like the Brownies I am familiar with. It also didn't look like the Brownies on the recipie.

I don't have a picture of what it first looked like but it was like a pudding.

I decided to 'salvage' the mixture and add a bit of flour.

 I just want to pause here and say that during Bake Off 2020 most of the bakers struggled with their Brownies.

Anyway mine emerged from the oven but they were not soft and gooey. This time they were quite 'robust'. After two days in the fridge they were rock hard.

Rock of Ages hard!

After hacking away at a few brownies my son decided to surrender and helpfully suggested that I stash them in the freezer for a later date i.e never.

I decided to put them in the food recycling but I had a final nibble and realised that they might be hard but they were lovely and chocolatey.

So they have been rescued, wrapped, and stored in the freezer to await the arrival of some vanilla ice cream. I shall probably be nibbling on these rock hard chocolate yummy Brownies for some time to come. 

Maybe I will still be nibbling them this time next year.

But I won't be cooking with Miso for some time to come.
